Gluten Free Brown Butter Cornbread Cookie Recipe

Make the perfect fall cookie! whether it’s for a family gathering, thanksgiving, sunday brunch, or a nice study snack, these cookies are the perfect cross between a sugar cookie and corn bread. The burnt butter adds the best flavor that tastes like fall.

Recipe

Ingredients:

  • 1 stick of butter

  • 1 egg

  • 1/3 cup white sugar

  • 1/3 cup coconut sugar

  • 1/3 cup brown sugar

  • 1 tsp vanilla

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 2/3 cup almond flour

  • 2/3 cup finely ground corn meal

Instructions:

  • Preheat the oven to 350F

  • Brown one stick of butter in a saucepan - keep on medium/low for 5-10 minutes until color is a caramel brown

  • Add the 3 sugar’s into a bowl and pour the browned butter in top of the sugar. mix until one paste.

  • Add the egg and vanilla and mix

  • Add the salt and baking soda and mix. then add the almond flour and corn meal

  • Optional: put in the fridge overnight

  • Roll into small balls spread 3-5 inches apart (they spread!)

  • Bake for 10-13 minutes

  • Let cool and enjoy!
