Gluten Free Brown Butter Cornbread Cookie Recipe
Make the perfect fall cookie! whether it’s for a family gathering, thanksgiving, sunday brunch, or a nice study snack, these cookies are the perfect cross between a sugar cookie and corn bread. The burnt butter adds the best flavor that tastes like fall.
Recipe
Ingredients:
1 stick of butter
1 egg
1/3 cup white sugar
1/3 cup coconut sugar
1/3 cup brown sugar
1 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt
2/3 cup almond flour
2/3 cup finely ground corn meal
Instructions:
Preheat the oven to 350F
Brown one stick of butter in a saucepan - keep on medium/low for 5-10 minutes until color is a caramel brown
Add the 3 sugar’s into a bowl and pour the browned butter in top of the sugar. mix until one paste.
Add the egg and vanilla and mix
Add the salt and baking soda and mix. then add the almond flour and corn meal
Optional: put in the fridge overnight
Roll into small balls spread 3-5 inches apart (they spread!)
Bake for 10-13 minutes
Let cool and enjoy!
